well, eggs.\u00a0Turns out you\u2019d be wrong!\u00a0These tofu egg-less salads are surprisingly convincing and, dare I say, even better than the classic.\u00a0What\u2019s more, you don\u2019t have to eat it all in one sitting for fear of it going bad.\u00a0Rather, leave it covered in the refrigerator overnight to let the spices seep into the tofu and make it taste even better the next
